Authentic Punjabi Choley Recipe with Dinesh White Chana

๐Ÿง„๐Ÿ… ๐Ÿ“ Ingredients:

  • 1 cup Dinesh Flour Mills White Chana (medium size)

  • 2 medium onions (finely chopped)

  • 2 tomatoes (pureed)

  • 1 tbsp ginger-garlic paste

  • 2 green chilies (slit)

  • Whole spices: 1 bay leaf, 2 cloves, 1 small cinnamon stick

  • 1 tsp cumin seeds

  • 1 tsp turmeric powder

  • 1 tsp red chili powder

  • 1.5 tsp coriander powder

  • 1 tsp garam masala or chole masala

  • Salt to taste

  • Fresh coriander for garnish


๐Ÿ‘ฉ๐Ÿณ Method:

  1. Soak & Boil:

    • Soak 1 cup Dinesh White Chana overnight.

    • Pressure cook with 3 cups water and a pinch of salt for 5-6 whistles until soft.

  2. Prepare Masala:

    • In a pan, heat 2 tbsp oil. Add cumin seeds, bay leaf, cloves, and cinnamon.

    • Add onions and sautรฉ until golden brown.

    • Add ginger-garlic paste and green chilies. Sautรฉ until raw smell disappears.

  3. Cook Tomato Base:

    • Add tomato puree, turmeric, chili powder, and coriander powder.

    • Cook until oil separates.

  4. Simmer Choley:

    • Add boiled chana to the masala. Add salt and 1 cup water.

    • Simmer for 15โ€“20 minutes on low heat.

    • Add garam masala and mix well.

  5. Garnish & Serve:

    • Garnish with fresh coriander and sliced onions.

    • Serve hot with bhature, rice, or roti.
